Matthew Wade of Hundred House Coffee shares his recipe for Sami the Snare’s Ginger Brew

Makes 1

Seedlip Grove 42 70ml
Ginger concentrate (we use GIMBER) 50ml
Spiced gingerbread syrup (we use Monin Pain d’Epices) 50ml
Lemon 1, juice (approx. 50ml)
Ice cubes 6
Non-alcoholic beer (we use Doom Bar Zero) 140ml

Method
  1. Put the Seedlip, ginger concentrate, gingerbread syrup, lemon juice and 2 ice cubes in an electric blender and pulse for 10–20 seconds – just long enough to crush the ice.
  2. Put 4 ice cubes in a chilled beer glass.
  3. Pour in the blended liquid, top with the beer and serve.
Chef’s tip

Before you cut and squeeze the lemon, roll it on the counter, pushing it down with the palm of your hand, to extract more juice’
