Simple syrup (1:1 caster sugar and water) 55g
Xanthan gum 0.4g

Method
- Make a simple syrup (using 1:1 caster sugar and water), then let it cool.
- Blend 0.4g of xanthan gum with 55g of simple syrup using an immersion blender. This mixture can be prepared several days in advance.
- Shortly before preparing the drinks, blend the syrup and xanthan gum mixture with the Califia Farms Oat Barista Blend using an immersion blender, then pour into a whipped cream dispenser.
- Add the cream charger, vigorously shake ten times, then hold the dispenser upside down and squeeze directly onto the drink.
