Makes 1 whipped cream canister

Simple syrup (1:1 caster sugar and water) 55g
Xanthan gum 0.4g
Califia Farms Oat Barista Blend 440g
Whipped cream dispenser
Cream charger

Method
  1. Make a simple syrup (using 1:1 caster sugar and water), then let it cool.
  2. Blend 0.4g of xanthan gum with 55g of simple syrup using an immersion blender. This mixture can be prepared several days in advance.
  3. Shortly before preparing the drinks, blend the syrup and xanthan gum mixture with the Califia Farms Oat Barista Blend using an immersion blender, then pour into a whipped cream dispenser.
  4. Add the cream charger, vigorously shake ten times, then hold the dispenser upside down and squeeze directly onto the drink.
