Brew barista-quality filters in your own kitchen with this drip filter brew guide

1. Pour
Place the filter paper in the drip brewer. Pour boiling water through the filter paper to rinse it.
2. Grind
Weigh the beans and grind to a medium consistency.
3. Tap tap
Place the coffee in the filter paper within the brewer and tap the sides so it settles. Place the brewer on a receptacle, and put this on the scales and tare. If you’re using a Chemex, tare the entire thing.
4. Weigh the water
Heat water to around 95°C and weigh it.
5. Bloom pour
Start the timer and pour water slowly from the centre outwards, saturating the grounds. Pour about twice the amount of water to coffee initially – this should take 30-40 seconds. The grounds will expand and bloom.
6. Tick tock
After 30-45 seconds, when the bloom stops expanding, add the rest of the water in a steady spiral towards the outer edge, pouring over dark or bubbly patches.
7. Wait
All the water should have drained through the coffee within 4 minutes.
8. Drink
Remove the brewer from the jug or remove the filter paper from the Chemex and pour the coffee into a cup.
